chicken madiera, cauliflower mashed potatoes, argula salad, bread

I was looking thru Pinterest recipes today and found an awesome one!

it is inspired by the cheesecake factory chicken Madeira. I thought this looked so good but I put my twist on it.

SHOPPING CART

chicken breast. I did about 3 thin cut boneless and skinless

cauliflower, steamed or softened. about 1 cup

mozzarella balls

cherry tomatoes

mushroom

onions

balsamic vinegar

Brown sugar 

beef broth

provolone cheese or mozzarella or cheese of your choice

olive oil

white wine vinegar 

argula

bread and butter optional
Making the chicken 

in a plastic bag, I combined 1/2 cup balsamic vinegar, 2 tbsp brown sugar, and 1/2 cup olive oil with pepper. I sliced my chicken breasts and marinated them for about an hour. 

cauliflower mashed potatoes 

I wanted something different then just regular mashed potatoes. I steamed some cauliflower and then mashed it into some mashed potatoes. gave it a little more flavor. 

argula salad

I made this in a previous post. we loved it so much we decided to make it again. 

I cut up tomatoes and mixed them with mozzerrall balls that I coated with about 4 tbsp olive oil, splash of lime juice, and about 2 tbsp of white wine vinegar. tossed that all together and it was to die for!

bread and butter

simple. it’s bread and butter

Making the chicken 

in a sauce pan, cook the mushrooms and onions until tender. remove from pan. 

cook the chicken in the same pan. only cook about 4 to 5 minutes on both sides. enough to get golden brown 

while that is cooking, make the sauce. it is about 1.5 cup beef broth. 1/3 cup balsamic vinegar, and 2 tbsp brown sugar. remove the chicken and put the sauce back in the pan with the mushrooms and onions. cook until bubbling. 

put the oven on 400 degrees. once the sauce is bubbling, add the chicken to the meal and put in the oven for about 20 minutes. 

remove from oven and put cheese on it. cook for about 3 minutes or until cheese is melted. 

assemble your plate and enjoy!
